Real barbeque is beef brisket, not a '‘throw away’ piece of the cow. Sorry pork fans, but it is what it is.
And, if you are using a ‘throw away’ piece of beef, make fajitas. I knew the great Sonny Falcon, the ‘Fajita King’, who introduced fajitas to the rest of the world, and skirt steak was the ‘choice’ of beef.
(to my compadres in the Deep South, I really do enjoy pork barbeque. And, it is really hard to find beef barbeque in Atlanta and surrounds. When the urge gets ya, you do whatya gotta do!)
