I don’t want to get too passionate (I was raised Jewish, but no longer practice), but for centuries Jews have fought the vicious assertion that they are a nationality rather than merely a religion.

Many Jews think of being Jewish as an ethnicity.

I get that, but in a way it’s merely a tad less offensive. I once asked a non-practicing friend if she still considered herself Jewish, and she replied that she still liked bagels and lox. I’m just not clear that that’s an ethnic trait, rather than a tradition of some kind.
