LOL. Couldn’t help but laugh at your comment. That said, my Mom uses pretty much every part of the turkey as well. Though, I’m not sure she wants anymore than she already has.
I use one carcass to make turkey soup. Don’t know how I could want that more than once a year. Hell, I’m already “done” with turkey half-way through carving.
Many moons ago when I was young, had a lot of energy and dumb, I decided I was going to make the pumpkin pies from scratch … literally. That was the last year I ever did that. As a kid, I always loved to help Mom is the kitchen. I loved the holidays – creativity time!!! For years, I was the designated pie maker for Thanksgiving and Christmas (and Easter and the Fourth of July and so on and so on). After that Thanksgiving (what a fucking mess), it was canned pumpkin for me. I don’t use pre-mixed pie can stuff either. I really do like to play in the kitchen … I really wish I had a partner or roommate who could be my test subjects. LOL. My enthusiasm rubbed off on my sister. In the family, we’re both known to experiment and try kooky things. If my mother and father only knew the stuff my sister and I ended up throwing away (behind their backs, of course). Back then, it was much easier to feed a good-sized family (five kids and mom and dad plus various cousins and stray friends). Good memories.
I’ve been cooking since I was very young. My mother told me about one time I didn’t remember. I liked butterscotch and decided to make my own. Mother said she came into the kitchen to find me merrily using the mixer, mixing together butter and scotch.

That’s awesome! That was probably one of those times where the hardest part about being a parent is trying not to laugh your ass off.

I did that pumpkin pie thing too, but used home grown Hubbard squash instead of pumpkin because the flesh is not so watery. People asked if the pies were made from scratch, and I told them they were made from seed. You are right, it is a lot of work for a pie, but well worth it. I got one of those yankee apple peeler slicer gizmos and find apple pie to be a little easier. I am waiting for a batch of bread to finish baking now. It is oatmeal bread sweetened with molasses and with a handful of chopped walnuts thrown in for fun. The house smells like a bakery and the oven takes the edge off the cold wind blowing outside today.
I just got through eating a bowl of granola enhanced with plenty of raw pecans and walnuts smothered in a pumpkin pie-like mix I make on he stove. I eat it like cereal and milk. Little sugar (but enough), butter, lots of good cinnamon, whole milk. Simple to make, very satisfying for any sweet tooth and super healthy.
I love oatmeal bread. I eat a lot of oats in a year. Your home sounds inviting.
I do something similar! Oatmeal, brown sugar, various nuts, dried cranberries, and olive oil. Heat a pan and add sugar and olive oil, and when sugar grains disappear, pour oatmeal and nuts and mix well. Then spread on your cookie pan (place a sheet of parchment paper on it) and put it in the oven (@320f). When lightly browned, done! Add and mix cranberries. Love it

I make my chicken stock completely from the carcasses of roasted chickens. The flavor is very rich from a combo of any flesh still on the bone, the bone itself and the marrow. Also very healthy.
However, I don’t have the space in my fridge for 1 turkey carcass much less multiple ones.

Not sure I could accept strange carcasses dropped off on my doorstep - sounds disgusting and potentially disease-ridden or spoiled. I hope he makes safe use of them, and that I’m just wrong about this.
