I’ve heard there’s case law regarding the Appointments Clause of the Constitution that could conceivably harm Mueller’s investigation.

This is, if nothing else, short-sighted. If there is no legal authority in the US constitution to prosecute such attacks on the US as crimes, then it becomes a foreign policy/military matter, where, er, due process is not exactly the same.
