I tried a beef chili recipe recently. The suggestion was to use 1/2 t. of baking soda for 2 lbs of 85/15 ground beef to help it brown nicely and retain moisture. Then you make your own chili powder by toasting dried ancho peppers, grinding them in the food processor, and adding the rest of the spices. One can of pinto beans and beef broth. Simmered for a while. The chili powder was awesome, but it couldn’t mask the slight aftertaste of baking soda, sadly.
We ate it anyway, and it was better the next day, but that aftertaste was still there.
Seriously that’s cool. Maybe as time goes on I’ll get more particular. I have at least one author who says stir until it starts to darken. And I get nervous about burning it, frankly. It tastes pretty good regardless. Part of the problem is techniques that were developed when people viewed labor and time differently, especially in regard to who was doing that labor.
Good roux is like good barbeque in that both are cooked low and slow. I was taught to look for the color of a pecan shell at which point the roux is about 3/4 done.
Well the reporter should have asked Rep Fillmore “did he not get elected to his current position with mail-in ballots without voter ID?” Add something about how long has he served in his elected position with sketchy votes giving him the win.

A favorite here is peeling and cubing beets, then tossing with carrots, cauliflower, etc. ( depends what’s on hand) in olive oil. Sprinkle with chili powder, cumin, salt, and pepper and roast in oven at 400 F. Yum!
I assume they reach for whatever is likely to create sensational headlines while exhibiting their racist dogwhistled credentials - whatever that may be. Cruelty is the point. This is what their voters want. This is what fascists do. This is who they are.
