To hear the old Italians tell it every one of those cuts of pastas taste different.

And, if they live in Tuscany, they will tell you which wells you should draw the water from for boiling, what the pot should be made from, etc., etc., etc. I roll my eyes and ask for seconds.

Don’t roll your eyes - the water does make all the difference.

The Romans figured that out and Italy is blessed with all kinds of water and it affects the pasta, the pizza dough, the coffee - everything.

Their complexions and health as well. They are strong believers in the magic of water and they have a good point.

They believe in magic of many kinds. Water dowsing is popular, as is dowsing for places where magnetic lines (or other invisible lines) cross and cause illness. An Italian prosecutor accused Amanda Knox of killing her fellow exchange student as part of a sexual satanic cult ritual. Just a few years prior, the same prosecutor made accusations of involvement with a sexual satanic cult against an American writer who moved to Italy and became interested in writing about the Monster of Florence serial killer. Although the prosecutor is just one person, there was no widespread belief in Italy that he was pursuing a crazy line of investigation, even though forensic evidence strongly refuted his theory of the crime in both cases.

I won’t argue that there are clear cases where some water doesn’t taste good or is chemically incompatible with the processes involving the water. I do know, though, that when one particular Tuscan visited us and used chlorinated tap water, less-than-fresh grocery store olive oil (I didn’t use it much back then, because my family didn’t use it when I was growing up), and grocery store pasta, the taste was magic.

Yes they do. I’ve seen it and I love it.

It’s one of the things that I have in common with Italians. I tend to be on the same wavelength in a lot of ways with the Italians I’ve met. It’s kind of funny because I don’t have Italian heritage at all.

The Neapolitans are big on dream magic, too. They get their dreams interpreted for lottery numbers to play. I just love that.

And I think there’s something in the water in Italy. Italians have gorgeous skin. Men and women both.
